
I fell in love with this salad and can eat it at any time of day. For me there are no better combinations than refreshing tomatoes and healthy white brine cheese. This is a salad to be served as a special offering and with respect. Your customer needs to feel privileged when they order it!
Serves 1:
- 100g white brine cheese
- 1 red vine tomato
- 1 orange or yellow vine tomato
- 1 tablespoon basil pesto
- 1 tablespoon pine nuts, toasted
- 1 teaspoon dried oregano
- 1 tablespoon extra virgin olive oil
- Fresh basil leaves, to garnish
Cut the brine cheese into 6×6 cm squares no more than 7 mm thick. Slice the tomatoes into rings about the same thickness as the cheese. Pile the tomatoes, cheese and pesto in layers and repeat the layers. Sprinkle over the pine nuts and oregano, drizzle over the olive oil and garnish with basil leaves.
