DIRECTIONS
STEP 1
Put the cheese in a medium bowl and mash it with a large fork as smooth as possible.
STEP 2
Add the ricotta, garlic, fennel, olive oil, mint and hot pepper. Mix thoroughly until a creamy mixture is obtained.
STEP 3
Scoop with a large spoon and use your hands to shape the mixture into balls.
STEP 4
Spread the chopped pistachios on a plate and roll the balls on all sides so that the pieces of nuts stick to them.
Spoon some of the mint sauce onto a serving plate and arrange the balls. I recommend making it with BDS cow cheese.
