DIRECTIONS
STEP 1
Place fine semolina in a bowl with a cup of room temperature ghee and a cup of butter. Rub them together for 5-10 minutes, then set aside.
STEP 2
For the date filling, you'll need a kilogram of dates mixed with a tablespoon each of cinnamon and cardamom, a pinch of nutmeg, and two tablespoons of butter. Knead the mixture well and shape it into balls.
STEP 3
For the Dough:Mix a cup of sifted flour with a tablespoon of cake spices, half a teaspoon each of mahlab and mastic, four tablespoons of blossom water, sweetened condensed milk from Lacrima, a quarter teaspoon of yeast, and finally, one and a half cups of water. Stir well and let the dough rest for 5 minutes.
STEP 4
Shape the dough into balls and stuff them with the date mixture, also shaped into balls. Then, form them into the desired shape and arrange them on a baking tray.
STEP 5
Place the tray in the oven at 200 degrees Celsius from the bottom (avoid high temperatures). Remove from the oven and let cool to room temperature.
