DIRECTIONS
STEP 1
Using a kitchen torch, burn the skin off the peppers and peel them. Remove the stalks and seeds.
STEP 2
Put the cleaned peppers in a blender and puree. Pour the puree into a small deep pan, add salt and leave it covered on a low heat for about 5 minutes. Remove from heat and let cool.
STEP 3
Meanwhile, cut the cheese into 4 slices and sprinkle each one with sugar. Caramelize the sugar using a kitchen torch.
STEP 4
Divide the puree between 4 serving plates, place a slab of cheese in the middle and sprinkle with pistachio pieces. Garnish with a sprig of fresh mint.
