Watermelon Salad with Mint

DIRECTIONS

STEP 1
Mix the honey and olive oil in a small bowl. Cut the watermelon into 10 x 10 cm slices, removing the seeds.

STEP 2
Cut the cheese into pieces of the same size. Arrange them in alternating layers in a serving dish, spreading each piece with the mixture of honey and olive oil.
 
STEP 3
Add the capers and olives, and sprinkle with oregano. Finish with mint leaves and a drizzle of olive oil.
I recommend preparing it with white brined cheese following the Bulgarian State Standard recipe (BDS).

  • 2 tsp honey
  • 2 tbsp. extra virgin olive oil + a little for garnish
  • 200 g of watermelon
  • 200 g of white brine cheese
  • 2 tbsp. capers
  • 10 sliced ​​black olives
  • 2 tbsp. dry oregano
  • a small handful of fresh mint leaves
